This is a recipe that begs for leftover rotisserie chicken or you could even use leftover turkey if you need to use up some holiday leftovers. One of the best parts of this recipe is that it is kind of a heat and eat main dish. Not any real chopping or browning. Make the stuffing according to the package directions and make the filling with cream of mushroom soup, cooked chicken and green beans and once it is warmed through top it with the stuffing.

Figure it Out:

What Flavor of Stuffing Should I Use? I used cornbread flavored stuffing because it is what I like best but you could use chicken or turkey flavored depending on what is used in the filling.

What if I don’t have green beans? Obviously, it wouldn’t be chicken, green beans, and stuffing skillet but peas or peas and carrot would work. it may taste a little more like pot pie filling using them but it would still be delicious.I have made it with peas and carrots before.

Can I use frozen vegetables? Yes, but you will need to adjust the cooking time.

What are some other ways I can dress this up? If you have the time and desire, sautéing some onions and garlic in butter or oil before adding the soup, chicken, and green beans would make the end result even tastier.

Mushrooms would be a nice addition as well .Again you could sauté them before adding the rest of the filling ingredients or drain some canned mushrooms for less work.

What to serve with Skillet Chicken, Green Beans and Stuffing?

I served mine over homemade mashed potatoes but egg noodles or rice would be excellent choices as well.

For more vegetable side dishes I would go with a simple salad or some sauteed squash.
