Figure It Out
What kind of oatmeal should I use?
I used old-fashioned rolled oats for this recipe. You could probably use quick-cooking oats, but they'll take less time to cook. Instant oats are different, though, so I wouldn't substitute them directly without adjusting the cooking method and liquid.
Can I use pumpkin spice or pumpkin pie spice?
Absolutely! Either would be a lovely substitute for the ground cinnamon. I don't keep pumpkin pie spice on hand, so I just use cinnamon.
How do I store and reheat pumpkin oatmeal?
I haven't tested storing and reheating this oatmeal because I don't particularly like leftover oatmeal and the texture it develops. If you choose to save leftovers, transfer them to a covered container and refrigerate promptly. Reheat thoroughly, adding a little water if needed to loosen the texture.
How can I dress up pumpkin oatmeal?
A little vanilla extract or maple extract can add another layer of flavor. Try starting with ¼ teaspoon and adding more to taste. You could also sprinkle a little extra cinnamon on top before serving.
If you like your oatmeal sweeter, adjust the sugar or one-for-one sugar substitute to suit your taste.
For richer oatmeal use milk for part or all of the water.
