Apple Fritter Pancakes

Apple Fritter Pancakes are an easy way to dress up boxed pancake mix.

Boxed pancake mix is a staple in my house but sometimes just plain pancakes with syrup can be boring. That’s why I love making small changes such as adding different fruit to the batter. The only change to how I normally make pancakes is literally just chopping an apple and adding it to the batter.

Apple Fritter Pancakes

Adding fall flavor to just add water pancake mix for an easy and tasty breakfast or brunch.

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 1
Category: Breakfast
Cuisine: American

Ingredients

  • 1/2 cup complete pancake mix
  • 1 small apple diced, I used Gala
  • 1/2 teaspoon cinnamon
  • 1/4-/1/2 cup water
  • oil, butter or cooking spray for the pan
  • butter and syrup for serving

Instructions

  1. Preheat a skillet over medium heat
  2. In a bowl add the pancake mix, apple, and cinnamon.
  3. Add water a little at at time until the batter has your desired consistency. I like fluffier pancakes so I use on the lower end of the measurement.
  4. Add the oil, butter, or cooking spray to your pan
  5. Pour half cupfuls of batter into the prepared pan and cook for 2-3 minutes per side or until the pancakes are golden and cooked through
  6. Repeat with any remaining batter.
  7. Serve warm with butter and syrup

Apple Fritter Pancakes

Figure It Out:

What kind of pancake mix should I use? As long as it is says complete or just add water you can use any kind. Regular, buttermilk, or protein will all work.

What kind of apple should I use? I used Gala because those are my favorite and the kind I keep on hand but use your favorite. Of course different varieties will give a slightly different flavor and may cook differently with some going softer than others,

How to store and reheat the apple fritter pancakes: Store any leftover pancakes in a covered dish or storage bag for up to 3 days

How to heat up in the microwave: Heat at 30 second intervals on high power until heated through

How to heat up on the stove: Place the pancakes in a dry skillet over medium heat and cook for 2-3 minutes turning frequently or until hot

Can I freeze any leftover pancakes? I have not tested that so honestly I don’t know. Pancakes themselves freeze very well, but I don’t know what the addition of the apples may do.

What if I need more than two pancakes? This recipe is written for one person so how many people you need to feed multiply the ingredients by that number. For example if you need pancakes for 2, double the ingredients, for three, triple the ingredients.
