Easy Jalapeno Bites are made with easy to find pantry ingredients.
Why use pancake mix as a batter? Because this kind only needs water making it easier to prepare and not having to rely on milk or eggs.
Does it matter if I use buttermilk or original pancake mix? No, as long as it labeled complete or just add water you can use either kind. I keep buttermilk pancake mix on hand because it is what I prefer.
If I don't have a can of jalapenos what can I use? Diced pickled jalapenos. You will need 1/2 cup.
How spicy are these? With my spice/heat tolerance they are moderately spicy.
What can I serve these with? I ate them by themselves as a snack. However, I think they would go great with dishes you would have hush puppies with. While not exactly the same there are enough similarities that they would pair well.
What should the batter look like? The batter should not be as thick as cake or brownie batter but thick enough that it falls in a mound off a spoon without running everywhere or sticking to the spoon.
These Easy Jalapeno Bites only use three ingredients and 15 minutes for a tasty side dish, snack, or appetizer.
Ingredients:
- 1/2 cup just add water pancake mix. I used buttermilk but plain also works
- 4 ounce can diced jalapenos
- 1/4 to 1/2 cup water
- Vegetable Oil for frying
Instructions:
- Place a skillet over medium heat
- Add enough oil to cover the bottom by a quarter of an inch
- Place the pancake mix in a medium bowl.
- Add the canned jalapenos
- Stir
- Add water until you make a thick but spoonable batter
- Drop spoonfuls of the batter into the oil
- Cook for 2-3 minutes per side
- Drain on a rack or paper towel
- Serve warm
